Claypot Yee Mee

Ingredients:
2 tablespoons of cooking oil
1 packet of yee mee
8 big prawns
8 leaves of chinese cabbage/8 stalks of choysam
16 cloves of garlic
8 button mushrooms
500g of spare ribs
4 eggs
salt, pepper and sesame oil to taste

Steps (soup):
1. Put 5 bowls of water to boil. Add in spare ribs and cook for half an hour over medium heat.
2. While waiting for water to boil, heat up cooking oil in saucepan and pan fry garlic till brownish
3. Add garlic into soup
4. Put in prawns and remove them when it’s cooked. Repeat the same for chinese cabbage and mushrooms. Drain well
5. Pour soup into four claypots and heat up over the stove till soup is boiled again. Add in yee mee and cook till soften. Add in 2 prawns, 2 button mushrooms, 2 leaves of chinese cabbage and an egg into each claypot. Cover it and let it simmer for approx. 30 seconds
6. Ready to serve

Macaroni & Cheese

Ingredients:
1 box macaroni, cooked and drained well
2 tablespoons of butter
2 tablespoons of flour
2 cups of milk
2 cups of shredded Cheddar cheese
Salt and pepper to taste

Steps:
Preheat oven to 350 degrees
Prepare macaroni by directions on box and drain well
In a saucepan, melt butter over medium heat. Add flour and stir to remove lumps. Pour in milk and cook until thickened. Add cheese and stir until melted. Add macaroni and stir. Pour mixture into 2qt casserole dish. Bake for 20 minutes.
